Peanut Butter Ice Cream

This “ice cream” is freaking delicious, get creative with flavours. Now this is full of good fats so my advice would be to NOT eat it all in one sitting (although I know of someone who has…).

400ml coconut cream (I use Spiral Organics)
1 large frozen banana
1/2 tsp vanilla powder (optional)
2 scoops vanilla protein powder (or your choice) I use Naked Whey
1/2 jar Pic’s Crunchy Peanut Butter + 1 Tbsp extra
Pinch or two of salt
You can do this two ways:
Blend all the ingredients together and then freeze in a container. You will then need to let it thaw a bit before eating – stir extra peanut butter through it before eating.
Fill ice cube trays with the coconut cream. Once frozen add the frozen cubes and banana to a high powered blender/food processor/Thermomix/Mega Mix and blend. Be patient, it takes a couple of minutes. Add the remaining ingredients and then scopp into a container and stir through extra peanut butter and salt.
You can use any nut butter or for nut allergies add an extra banana and some cacao.
